Windows 10: Help with Ondrive syncing

I bought a new laptop with a 256GB SSD drive. When setting it up I chose the option to back up files automatically to onedrive.

I then noticed today that the "pictures" folder on my laptop contained 60 gigs of photos that were stored in onedrive.

I also has folders being backed up in onedrive that I would rather not have there.

So I went into the OneDrive backup options and unchecked "desktop" and "documents" and "photos" and then all of my desktop icons and folders disappeared and there was an icon that said "where are my files" which took me to onedrive.

I can't even tell what's actually on my laptop anymore and what isn't?

Isn't there some easy way to exclude certain folders on my laptop from uploading to Onedrive, and stop certain Onedrive folders from syncing to my laptop?

And how can I restore my folders that got removed and replaced with the "where are my files?" Icon?

Any help would be greatly appreciated.

Can I somehow turn off the automatic backup? I'd rather just manually upload what I'd like on Onedrive after this mess.

Regarding your question, you will not lose the data of Ondrive while uploading them to the cloud since Ondrive works with your Microsoft gutter

UPDATE

I managed to get the PC's to list in ondrive for fetch by changing the computers name rebooting and changing it back again. Not sure why this worked.
Sync is working but I still do not have the sync folder in onedrive so have no way of deleting it If I needed to which is a real pain.
