Windows 10: How do I change my system so it shows apps, title bars, etc in dark grey?

There was some system update last night and now I seem to be only able to pick between white and black modes, both of which I find very hard on the eyes. I have tried looking at "Colours" and "Themes" in the setting, but none of those say how I can change back to the old colour scheme that was much better.I've also searched online, and people seem to be saying it can't be done, but that can't be right.

Change colour of File Explorer title bar?

I can change the colour of the start menu, taskbar, and program title bars as well as Internet Explorer title bar. However, the File Explorer bar remains grey. I have attached a screenshot to show my settings and results of the selections I chose. (Custom - Dark - Light - Show accent colour on Start and Taskbar (on) - Show accent colour on title bars and windows borders (on)) Do the colour settings not change File Explorer title bars?

 

Changing title bar color of specific programs

Is there a way of changing the title bar color of specific programs? Some companies like Google are reluctant at implementing proper support for new Windows 10 features such as colored title bars.

Goal is to make Google Chrome's title bar black or dark grey, since changing its theme makes it use a custom interface with horrible ugly context buttons.
