How to set certain types of files to read-only by default?

Context: I use a windows 11 computer to process data recorded by a scientific instrument. The data usually comes in the format of csv files.Question: Is there a way to set, for example, all .csv files to read-only by default, unless otherwise modified in file property menu? This is to prevent accidental writes.

    :)

It's not as simple as it seems How to set certain types of files to read-only by default? :)
Although it's easy as pie to change default apps by type file, but how to do it if I want to use app that's not on the default Window list?
    Like in this example,

  3. How to set default app for file type jpg

I would like to change the default app for the file type jpg. I've gone through all the steps for setting a default app but the jpg file extension does not appear in the list and therefore I cannot choose a default.

When I Open a jpg file it opens in the Photo app. If I look at the Photo app's settings of default file types, jpg is not there.

    Ditto for file type png.

How can I access the default setting for these and other "hidden" types?

How to change default app for file type

@Bree - yes, I'm quite aware of this thanks, but as you will see it's missing. I recall reading that clicking the dialogue at a certain point in blank space made it appear, and trying that once successfully, but doesn't seem to help now. Plenty of other similar reports of this option being missing.
