  3. Setting office 2016 as a default

This references Office 2013, but also applies to Office 2016:

Can't set earlier version of Office as Default Program

    Applies To: Excel 2013 Word 2013 PowerPoint 2013 Publisher 2013 Access 2013

When you have two versions of an Office program on the same PC, such as Word 2013 and Word 2010, you won’t be able to set the older program as the default in Default Programs in Control Panel. Only the newer version of Office will show in the list of programs.

Because you can’t set the default Office program, you won’t be able to choose which version of Office you’d like to use when you open a file.

To get around this problem, start the Office program you’d like to use first, and then open the file (File > Open) in the program. For example, if you’d like to open an older Word document with Word 2010, you’d need to start Word 2010 and then open the document
    in Word.

So, unfortunatel, there is no way around this.

You might want to download an ISO, as I assume you already have an activated Office suite I don't see any harm here
You can't even uninstall & reinstall anything without the disk

Well, if it is the automatic backup creating the extra files, you would want to uncheck the box for Save Autorecovery Information. But extra copies of documents have saved my behind more than one. Typically, though, autorecovery documents start with a ~. The normal source of files with (1), and (2), etc are user saves who pick the option of making a copy of the file instead of overwriting the existing file.

How are you making the edit, are you editing the doc and then using 'save' or 'save as'?
