Password Sign-in not available on Windows 11

My Computer which uses Windows 11 now asks for me to setup Windows Hello which I do not want to do. I just want to use a password like I use to. I know that I can setup Hello to be the same password, BUT to me that is a higher risk since the password is in several places. I went to Settings-Accounts-sign in to change to not use Hello, but it is greyed out so I can't change it. How do I get back to just using password?

    :)
