Windows 10: PC Health Check states Intel Core i7-7500U doesn't currently meet Windows 11 system...

I'm attaching 2 jpgs which show that the above processor satisfies all the system requirements though the PC Health Check app says it doesn't. This has to do with what is listed as supported processors. This processor should be on the list. If it is not added to the list then a better explanation of why it is not supported should be provided.Thank you.

Correct. The "PC Health Check" has been temporarily pulled by Microsoft until they work out some bugs with it.

PC Health Check app buggy?

Same here. Can't run because of 7th gen i5 even though all the "specs" meet the requirements easily. I'm sure there are millions of PCs out there with processors older than 3 years, so Microsoft is splitting up the userbase. Half will be on Windows 10 until EOL (Oct 2025), and the other half on Windows 11. Bad decision if you ask me.
