Is there a way to set up subfolders in windows 10 mail?

  Where are you trying to create a sub folder is it on mail app or other application?
  

If it is mail app, unfortunately there is no option to create a sub folder in Mail app, I would suggest you to share your feedback in Windows Feedback app.

 

Windows 10 Mail App sub-folders disappeared

I upgraded to Windows 10 and the mail app does not have the sub-folders that the Windows 8 mail app had. How can I set up the app to include these sub-folders?

Windows 10: In the new version of Windows, Explorer has a section called Quick Access. This includes your frequent folders and recent files. Explorer defaults to opening this page when you open a new window. If you’d rather open the usual This PC, with links to your drives and library folders, follow these steps:

• Open a new Explorer window.
• Click View in the ribbon.
• Click Options.
• Under General, next to “Open File Explorer to:” choose “This PC.”
• Click OK
