Windows 10: Syncing to OneDrive only some of My Documents subfolders

My question is very simple, perhaps it was posed somewhere else but I couldn't find an answer.

1 I can 'ban' OneDrive from syncing My Documents folder for good.
2 I can choose which folders from within My Documents I want to be synced.

But is it possible to create backup copy of My Documents at OneDrive but not of all folders it contain?

Most of PC games create its own subfolder within My Documents. Some of them contain thousands of files and are far greater than my OneDrive storage space. Files there are syncing every time I modify them eg. every time I play, they use all of my OneDrive space, they slow down every proces and - when OneDrive is full - files somehow mess up with the games themselves as they try to download some of the files involved while opening the application.

When I tried method no. 2 mentioned above, I've got the exact opposite of what I need. I don't want to get rid of some folders from PC and leave them on OneDrive, I want them to stay on PC and keep away from OneDrive. Options like "Keep always on the PC" are going to the opposite direction as well as they mean files can stay *also* on the PC, while I want them to be exclusively there.

And no, I can't move folders somewhere else, as they have to be in My Documents.

I'll appreciate any adequate help.

Select your folder to synchronize "documents", then expand the ">" folder and manually select the subfolders you want to synchronize

those folders that are not automatically selected will be disconnected from onedrive and will not be synchronized.

Onedrive Sync with "User/Documents"

I am using OneDrive to sync documents. I linked the Documents folder to OneDrive and it is synced. The problem is that many applications are using the folder "User/Documents", so the data of them is synced to OneDrive too. But I don't want to sync them.
How to deal with this problem?

And I am also using OneNote. OneNote files are all in folder Documents. If I unlink "User/Documents" to OneDrive, will the OneNote stop sync?
