Yesterday I tried every fix I could find on the internet regarding this, but none worked having limited ability to u

  4. Unable to click on anything in the Windows 10 UI in order to run programs or even select...

Default Program does NOT select/set Application

For #1, necessary registry entries have to be added in order for the program to be listed in Default Apps. Regardless, you can right-click a file type that you want to associate with "EditPad", click
Open with... select EditPad from the list and enable the "Always use..." checkbox and click OK.

For #2, As a workaround, click Set defaults by app in the Default Apps window. this option launches the Classic Dfeault Programs UI.

(Note: I've seen this issue happens for local accounts (which was switched back from Microsoft account). Switching to Microsoft account fixes this.
