Windows 10: Unable to temporarily deactivate Windows Security in 2020

Following the recent May Update, windows defender now shows as Win Security. Is there a way to find the previously popular 'Real Time Protection' toggle button? If not, what happened to exclude command for folders and files?

I have some old software that I really like using but it instantly cashes and I believe it's something to do with this update.

Kindly assist.

(And by the way Win Security interface is hella confusing)

How can Windows Defender be temporarily deactivated?

May I ask why you feel the need to temporarily deactivate Windows Defender?
