Windows 10: Why will my scanner only scan color as a j peg instead of a pdf?

My new Canon printer scanner will scan a black and white document as a pdf but color documents come through as a j peg and every page is it's own picture. I have tried to select pdf in the settings but it doesn't seem to recognize it.

There are several reasons why the scanned file as PDF gets too large. Here are the most common causes:

• Dot Per Inch (DPI) - Most scanners will use 300 DPI for scanning images, which is the minimum DPI for the images that were printed after scanning. However, 72 DPI should be already enough for a PDF that is for screen reading.
• Saving the document as colored - Use black and white instead of color when scanning images to lessen file size. Make sure that any color settings such as
  Color Depth are also decreased.

If the suggestions have been tried but the PDF file size is still too large, the next option is to check the PDF software that is performing the conversion itself.

Windows 10 Scan App - PDF File Sizes Too Large

I am speaking specifically of the Windows 10 scan app, which does not let me differentiate between B/W & Color. The only options I have for resolution are 100/200/300, and the 100dpi does not do much better (4MB for 3 pages of color). Using a commercial
printer, I get the same scan @100dpi full color for less than 0.5 MB...

How do I fix this Windows 10 Scan app?? Full settings available to me are below.

I was amazed by NAPS2, because it's free and open source, and simple as well. It really fits the ordinary user's needs.

I have used NAPS2 with RICOH SP112su for scanning 52 pages into a single PDF, and it worked like charm.
