Windows 10: Window 11 is not showing Date + no option to "Combine Taskbar buttons"

It being the week that Microsoft forcefully installs Windows 11 on my PC, whereas i was super happy with Windows 10, Now Windows 11 is not showing the full date in the system tray that I use to have in Windows 11. Also, Window 11 don't have the option to never combine Taskbar buttons, check the screenshot below:

Where did the "Combine taskbar buttons" option go in Windows 11?

By default, Windows 11 combines the taskbar buttons. Windows 10 has a "Combine taskbar buttons" setting that I could set to "Never", resulting in separately labeled taskbar buttons for each open window. How do I accomplish this in Windows 11.

In Windows 10, you can personalize the settings of your taskbar. If there are multiple applications opened, same applications will be combined under one taskbar button. If you want to change this setting, we suggest that you follow the steps listed below:

• Press the Start button.
• Click on the Settings app.
• Select Personalization.
• At the left side of your window, click on Taskbar.
• Under Combine taskbar buttons, choose Never.
