Windows 10: Windows 10 keeps on freezing after the last update

So last night my PC was in sleep mode and decided that it's time to delete all my progress in few project that I clearly saved and were open while it updated itself..

Since the update the PC is turning on and I manage to work for like 30 minutes to 1 hour and then all of a sudden it freezes and I have to hard restart it (holding down the power button like a caveman) I have 16gb of ram, it's an HP laptop connected to external monitor (they extend so it's like long screen thingy, you know what I mean)

Here's what I'm usually using on my PC: like 3 VS code projects, 10 Firefox tabs, 1 word document, 3 notes in notepad++ and VLC for music with a playlist of 700 songs)

I can see that before the freezing the CPU reaches 100%, so I tried to use as little software as possible and I only use a single monitor (the laptop's monitor itself isn't on, I project to the desktop monitor, so now it's only 1 monitor and it's not a crazy 4K gaming one, it's a 6 years old 23 inches 1080p monitor) also I only had Firefox with like 6 tabs opened and 1 note in notepad++ and only 2 VS Code projects open, and it's still reaching 100% with no apparent reason on why..

I'd love to get suggestions on what to do with this problem because it's a huge pain.. thanks in advance
