Windows 10 version 1809 image shows as Windows 10 version 1607

I am confused and looking for help as I have not been able to resolve my issue.
I downloaded the Windows 10 version 1809 ISO
I created a boot USB stick
    I did a clean install of Windows 10 1809
After the install completed I checked the version number and it showed as 1809
I ran Sysprep and then used ImageX to create the image
Sysprep completed without any errors and the image was created with no error messages as well.
I then laid the image down on another pc and the image process completed with any errors
However when I went and checked the Windows version is shows 1607 instead of 1809 and I have no idea why?

I ran Sysprep after removing some apps I did not want on the image and I also tried running Sysprep without removing any apps first.

I also tried with the PC on the network as well as never being on the network.

Any help or direction would be greatly appreciated.

    :)

Which version of windows 10 to use? I have windows 7 home premium on it.

Should I use "windows 10" or "windows 10 Home Single Language" or "windows 10 N"

    Thanks!

    Windows 10 Tweaks

Pressing “Windows+Pause Break” (it’s up there next to scroll lock) opens the “System” Window.

Windows 10: In the new version of Windows, Explorer has a section called Quick Access. This includes your frequent folders and recent files. Explorer defaults to opening this page when you open a new window. If you’d rather open the usual This PC, with links to your drives and library folders, follow these steps:

    • Open a new Explorer window.
    • Click View in the ribbon.
    • Click Options.
    • Under General, next to “Open File Explorer to:” choose “This PC.”
    • Click OK
