Windows 10: Windows 11 keeps changing my keyboard options to include US English

I only want UK English. I tried to fix it before by deleting US and reinstalling UK and I think it worked for a while but US English has creeped into my system again. So now every time I try to change language it changes to US first then to UK.US isn't even on my list of options whether it be in Language & region or KeyboardThis should be simple. How to Change Windows store and apps language to English

As per the issue description you are willing to change the language back to English which get changed after installing November update in China.
I would appreciate if you can provide us the following information to help us understand the issue better.

• Is the issue specific to some apps or with all apps?
• Is the language of the OS and keyboard in English?

I would suggest you to try the steps provided below and see if it helps you to fix the issue.

Step 1: Set the display language to English by following the steps below and check if the issue is resolved.

• Press Windows icon key on the keyboard, type
  Settings and select the top most search result.
• Select Time & Language and click on Region & Language from the left side panel of the window.
• Click on Add a Language under Language settings and select
  English.
• Click on the added language and click on Options.
• Click on Download to download the language pack.
• After the download is complete, select the language and click Set as default.
• Check if the changes are effective.

Step 2: If the issue persist, I suggest you to run the
Windows apps troubleshooter and check if the issue is resolved

In many cases, the Windows Store will automatically notify you if there’s a problem with an app and try to fix the problem. If you continue experiencing problems with an app, this tool can automatically identify and fix some problems with apps and the Store.

Can I keep the Windows system in English but the keyboard in a different language?

Since it didn't work, we suggest that you follow the steps below:

• Click on Start menu.
• Go to Settings.
• Select Time & language.
• Go to the Region & language tab.
• Click on English (United States).
  
• Click on Options.
• Select Add a keyboard.
• Choose Icelandic.
• Click on US.
• Select Remove.

The steps above will let you add a keyboard for Icelandic.

Once done, kindly check if you can now type using the language that you want.

I would suggest you to refer the steps mentioned below and see if you are able to remove the language pack:

1. Type command prompt in the search bar on the
   Taskbar.
   
2. Right click on the command prompt icon and select
   Run as administrator.
   
3. Now, paste the following command and hit Enter:
   lpksetup /u en-US.
   
4. Restart the computer.
