Windows 10: Windows will NOT stop overriding my GPU Driver, even with the device setting disabled

I have specifically selected the option to disable windows from installing drivers because frankly you install old drivers over current ones and break software. I am on a brand spanking new machine and this issue has caused my GPU driver and software to break their link with each other over a dozen times already.I have had this selected since this issue started, yet within minutes of completely wiping all GPU related drivers to ensure AMD software was not conflicting with itself, windows decides I need an update, to a driver that literally has the most recent proper driver properly installed.

Running Windows 10 v.1709, and every night when I come home, my Geforce Experience app prompts me to reinstall my GPU driver. It seems odd since I've done it the previous night, but if I try to launch any games, they always crash because D3D isn't enabled
or active. Then I have to reinstall my GPU driver, before I can launch any games.

I can't find any "hidden" updates using your hidden update tool, so I can't stop the Windows override of my current -- NOT OUTDATED -- GPU drivers. Is this just something I'll have to live with? I'd hate to turn off automatic updates just because Windows
feels it's own native driver is better than updated manufacturer GPU drivers.

For reference, it's a Geforce GTX 1080. Also, please don't reply with a canned answer about uninstalling unwanted drivers.

3. Choose No (your device might not work as expected).
4. Click Save Changes.
5. If prompted, click Yes or enter the administrator password.
6. Restart your computer.
