Windows 10: Downgrading to Windows 8.1 from Windows 10 Preinstalled

Recently My Windows 8.1 PC went down on me and I likely need to buy a new computer. The Computer I would like to buy has Win 10 on it but I have read a number of complaints that Win 10 cannot play older games and that they downgraded to an earlier version of Windows so they can play their older games. ALL my games play fine on Win 8 so I am nervous about getting a Win 10 computer. My question is this. Can I downgrade to Win 8.1 from Preinstalled Win 10 after 30 days from activating Win 10 on a new computer if I'm not happy with Win 10 ? I still have my old Win 8.1 computer with the Product Key and Restore Disks for Win 8.1 and the Driver Utilities Disk. If I can, what is the procedure? if, not how do I proceede to install Win 8.1? Any help would be appreciated.
