Windows 10: Downgrading to windows 8

I'm considering downgrading to win 8 because I had enough of win 10 updates. I'm sick and tired of it messing up my work. I'm a structural engineering student who has lots of projects, online lectures etc.

I tried disabling updates guides and nothing works. I literally set it not to update for couple of months and it just ignored me.

I was designing a building in Revit today when I noticed a huge drop in performance and while I was teaching a class to bechlor degree engineers. I restarted and it suddenly appeared on my screen " please don't shut down your computer updates 0 % complete."

It's not the first time this sh!t happens and I'm looking at blue screen 60% after 30 mins.

I heard win8 doesn't get updates and at this point I don't care about security anymore. I don't have sensible information on my pc. Should I downgrade? And has anyone do it?
