How do we do a time stamp of our photos and make it visible on the photo.

You cannot. The date is only stored on the photo's metadata.

How do we make our laptop is not under constant surveillance?

    Hi there.

A quick googling came up with a few articles on this subject. This article is fairly recent.

  5. The first thing I would do is stick to reading factual tech news sites or stop listening to the people who have been giving you advice in the past.

If you plan to use Windows 10, then just use it and go on about your day. There's nothing to worry about at all. Use common sense and have a good anti-virus software package installed.

White listing security software is one general possibility- only approved programs are allowed to run. (That's not provided by Windows)

Currently I'm running SecureAPlus alongside Avast (free) - quite impressed. Good support, responsive, and a forum.
