Windows 10: How do you turn off all the garbage in this software windows10-11 ?

I was told I needed "permission" to delete files today ......permission from who , I own the machine ! More useless nonsense .I have a brand new 14th gen workstation PC with 128gb of RAM ....AND ITS SLOW !Why ? task manager provides a clue .200+ processes running on a new computer that has not even had any software loaded onto it besides windows 11 !Back in windows 7 days it was more like 50-60 .We dont buy more powerful hardware so that microsoft can use it !We buy more powerful hardware so we can use it !Is there a way to strip windows 10-11 down to what is needed and thats it ?All the usele

To troubleshoot your issue, we suggest doing these following troubleshooting methods:

Method 1

• Turn off your PC.
• Press and hold Shift then turn on your PC.
• Wait for the setup (set up fixes the problem automatically).

Method 2

• Create a media creation tool by following the steps in this
  link.
• Select your preferred installation option and wait for the process to finish.
