That must be one hefty machine, With the roles you want Server 2012 r2 that will be a minimum of 4 gigs and 7 and 8.1 are at least 1gig each.

If the version of VMware Workstation you're trying to operate is less than 16.2.x, then it's likely that's the reason for the failures, since earlier versions of Workstation 16 aren't supported using a Windows 11 host per the following VMware support document chart.

Even with those newer versions of Workstation 16, I found multiple support documents on the VMware Communities relating to issues with stability for either Windows 10 or 11 as hosts. Here's an example from over a year ago.

Since these Microsoft Community forums are focused on Windows consumer issues that don't especially include multiple virtualization platforms, I'd recommend you post in those VMware communities instead, since everyone there is focused on those specific types of issues.
