    My mistake, that one is greyed out for me because i have Contact & Calendar sync turned off for gmail further down that page, so obviously cannot set the interval for it

    I would possibly be tempted to do a reset of the Mail app next, if that doesnt work then try a reinstall

    Settings, System, Apps & Features and then select advanced next to Mail from the list
    This should set mail back to defaults

    Then try adding gmail again and see if it makes any difference
